The Director of Luau Operations is responsible for the business leadership and management of the Luau Show andvenue, including all aspects of the Luau Show production, and Food & Beverage operations. Financial performance and staffing/development of the team. The Director of Luau Operations develops and implants strategies to meet business goals. This person provides the vision to drive a culture of exceptional customer service.
Works cohesively with supervision of Chef, Sous Chef, & Cook I to accomplish preparatory work for kitchen production for dining rooms, banquets & Luau. Be responsible working line stations and multi-tasking. Basic knowledge of sauces, methods, and knife skills are required.
The Food & Beverage Manager is responsible for assisting in coordinating, supervising and directing all aspects of F&B outlet’s operations, while maintaining a profitable F&B outlet and high quality products and service levels. He/she is expected to market ideas to promote business; reduce employee turnover; maintain revenue and payroll budgets; and meet budgeted productivity while keeping quality consistently high.
The VP of Resort Operations is responsible for continually focusing on achieving hotel profitability through revenue generation, cost control, guest satisfaction and developing employees, while maintaining the integrity of the beautiful Royal Lahaina Resort one of Maui's first resort properties on one of the world's best beaches.
The House Attendant is responsible for the maintenance and cleanliness of all assigned areas and equipment. He/she is also responsible for delivering items to guestrooms (express checkout, newspapers – property specific, etc.).
The Safety and Security Officer is responsible for providing protection and communication with hotel guests and employees. He/she is also responsible for patrolling hotel premises to maintain security, detect and report fire, security and safety hazards and/or violations of Highgate Hotel’s rules and regulations.
The Chef de Cuisine is responsible for ensuring that all meals coming from the kitchen are well prepared with regard to quality, consistency, eye appeal, taste and food cost. He/she is expected to provide training for all staff; meet corporate quality standards; and assist in establishing and enforcing food specifications, portion control, recipes and sanitation. The Chef de Cuisine is also responsible for controlling food and labor costs while maximizing guest satisfaction.
The Steward is responsible for maintaining cleanliness and proper storage of all china, glass, and silver, and ensuring the highest standards of sanitation. He/she is also responsible for assisting the kitchen staff in maintaining the cleanliness of the kitchen and all storage areas; specifically for cleaning all equipment, utensils, and the physical work area. He/she is also responsible for assisting with proper food storage and rotation.
The Director of Sales & Marketing is primarily responsible for leading & driving top line revenue strategy for traditional sales related segments to include group, volume transient & catering. The individual is additionally responsible for staying ahead of market trends, market share movement and ongoing competitive hotel analysis, while directing the property sales teams (rooms & catering) to insure budgeted revenues are met or exceeded. The Director of Sales & Marketing is also responsible for developing and implementing a marketing communications plan designed to achieve the desired positioning for the hotel, as well as managing the sales and marketing budget that supports revenue attainment.
The Groundskeeper is responsible for ensuring that the outside grounds of the property is maintained at the best possible condition at all times with the least amount of inconvenience to guests and employees. The Landscape Gardner is responsible for maintaining the grounds outside the building to include: trimming of grass, trees, shrubs, removal, and planting of all types of plants, etc.
